Diabetes is a metabolic disorder characterized by elevated fasting blood sugar
levels. This chronic elevation of glucose greatly increases the risk of heart
disease, stroke, kidney disease, and damages nerves. Diabetes occurs when the
cells of the body become resistant to insulin and glucose is unable to enter
the cells, or when the pancreas does not secrete enough insulin.

Overnight fasting glucose blood values of 140 mg/dl on to separate occasions.

Glucose Tolerance Test: Drinking 75 g of glucose, blood levels after 2 hours
are equal or greater than 200 mg/dl.

Diabetes Classifications:
Type I: Insulin-dependent diabetes mellitus (IDDM), most often found in children
and adolescents.
Type II: Non-insulin dependent diabetes (N(DDM) generally is found in adults
after 40 years of age.
Causes of Diabetes:
Genetics play an important role in the susceptibility to diabetes and environmental

functions as a cofactor in all insulin regulating activities. Chromium deficiency
is widespread in the US. Antibodies to pancreatic cells are present in 75%
of Type I diabetics, which causes destruction of the cells that produce insulin.
Complications of Diabetes:
Acute:
Hypoglycemia – low blood sugar.
Diabetic ketoacdosis – lack of insulin leading to a build-up of ketoacids,
which if left untreated can lead to a coma.
Non-ketogenic hyperosmolar syndrome ( primarily affects type II diabetics).
Profound dehydration due to deficient fluid intake or precipitating events.
Chronic:
Atherosclerosis – leading to a two to threefold higher risk of dying
due to a heart attack or stroke.
Diabetic retinopathy: a serious eye disease that can lead to blindness.
Diabetic neuropathy: Loss of peripheral nerve function causing tingling, numbness,
pain, muscle weakness, and loss of function.
Diabetic nephropathy: injury and destruction to structures, and tiny blood
vessels of the kidney.
Diabetic foot ulcers: Lack of blood flow and neuropathy are the main factors
in the development of diabetic foot ulcers that may lead to gangrene. Keeping
the feet clean, dry, warm, and wearing only well-fitted shoes, avoidance of
injury, and no tobacco use (blood vessel constriction), can help prevent diabetic
foot ulcers.
Diet recommendations:
A diet high in fiber from cereal grains, legumes, and root vegetables, and
restriction of simple sugar, simple carbohydrates, and fat. 70-75% of calories
from complex carbohydrates, 15-20% from protein, and 10-25% from fat. The
